Banana Muffins

I don’t know about you but my family will either eat 10 bananas in one week or 2 and there’s no clue to what it’s going to be! I just could not throw those over ripe bananas away, even when my neighbor looks at them with a disgusted side eye! I started making mini banana muffins about every other week, I found the week priors bananas could be added to any current weeks bananas and still produce great results.

Banana muffins are a great muffin to make eggless because banana is actually an egg substitute. For us these muffins have been a staple in our house since our son was diagnosed with a severe egg allergy 6 years ago. I have recently reconfigured the recipe to be top 8 free and the results are amazing! I seriously did not know gluten free eating could taste so good.

  • FREEZING It did not take long to figure out these muffins would freeze beautifully. After they have completely cooled you can place them in a freezer bag or container of your choice. I have never had to lay these flat, they do not freeze onto one another. They have been a real time saver on those busy school mornings. Pop 3 frozen muffins in the microwave for 60 seconds and breakfast is served. Pair it with a yogurt of you child’s choice and breakfast is served!
  • FLAX EGG Each Flax seed egg is 3 Tablespoons of warm water mixed with 1 Tablespoon of ground Flax seed. Stir and allow to rest for 5 minutes. It will become a little thicker as the flax absorbs some of the water.
  • BAKING I prefer to bake all my muffins without wrappers. I spray or oil the muffin pan with avocado oil because it has a higher smoke point (up to 500 degrees fahrenheit.) After baking I allow the muffins to cool slightly in the pan and then lift them out with a fork or butter knife.

Ingredients

Dry Ingredients Mix

  • 1 1/2 cup Flour (Gluten Free Blend)
  • 1/2 cup Oat Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder

Wet Ingredients Mix

  • 4 Medium Over ripe bananas (Mashed)
  • 1/2 cup Organic sugar
  • 1/2 cup Melted Earth Balance Soy Free Butter
  • 2 Flax Eggs One flax egg = 1 Tbs ground flax 3 tbs warm water, let sit 15 mins.
  • 1 tsp Vanilla Extract

Optional

  • 1/2 cup Enjoy Life Chocolate Chips Optional

Instructions

  • Combine mashed bananas, sugar, melted butter, flax eggs, and vanilla in mixing bowel. Mix on medium to high for 1 minutes.
  • Pour GF flour, oat flour, baking soda and baking powder on top of banana mixture. Mix gently on top to mix dry ingredients before mixing in completely.
    Or mix those items in a separate bowl then pour into banana mixture and mix on medium until incorporated.
  • Grease a mini muffin pain (no liners). Place one scoop per muffin. Gentlyl sprinkle enjoy life chips on top of muffins (optional.)
    Bake at 350 for 12-14 minutes.
