AH COLESLAW!

We love coleslaw at our house! It’s one of my husband’s favorite side dishes which is great for me because it only takes 10 minutes. I feel like it goes with so many dishes, BBQ of any kind, then there’s every flavor of pork, burger toppers and so on!

I have only recently discovered Hellman’s version of vegan mayo and I am beyond impressed! It is so good and creamy. I was unsure of how Frankie, my son, would like coleslaw, but was excited to let him try. Verdict is in, he LOVES it, a boy like his daddy.

KEEP IT SIMPLE

The ingredients are super simple but the perfect combination. It is how my mother made coleslaw and always received rave reviews. The first time my husband tasted my moms coleslaw he could not stop talking about it. Once I showed him all that was in it, his reply was, “if it’s that easy why in the world wouldn’t restaurants make it like this?”

Who knows maybe they don’t know the simple recipe! The Vegan Mayo in this recipe can be interchanged with 1/2 cup mayo and a 1/2 cup miracle whip if allergies are not of concern. Enjoy!

TIPS

Thinly sliced cabbage works best. Peeling and shredding full size carrots (not baby one) take this coleslaw to the next level. You can use a bag of coleslaw mix as well. If using the bagged mix I suggest adding 1 large shredded carrot. Fresh shredded carrots have a great sweet flavor. The coleslaw will not be perfectly white because of the fresh shredded carrots, but it truly looks more delicious. Sometimes I make this the day before but generally do not combine all ingredients until the day we will be eating it.

Ingredients

Coleslaw sauce (mix all)

  • 1 cup Vegan Mayo I love Hellman's Vegan Dressing & Spread
  • 1 tbsp Sugar Overfilled if using organic
  • 1 tbsp White Vinegar
  • 1/4-1/2 tsp Ground Sea Salt
  • 1/4 tsp Pepper

Coleslaw

  • 1/2 Head Cabbage Thinly Sliced
  • 3 Medium Carrots Shredded

Instructions

Coleslaw Dressing

  • Mix Vegan Mayo, Sugar, White Vinager, Salt and Pepper, wisk until well incorporated.

Coleslaw

  • Finely chop cabbage. Peel and shred carrots. Mix Coleslaw dressing with coleslaw. Chill and enjoy.
