Grill Packets
GRILL PACKETS
Hobo Meals are a cherished memory from my childhood! My Aunt Judy would have all of us cousins over to spend the entire weekend and she seemed to enjoy it, HUH? I seriously don’t know how she did this and kept her sanity, but man we sure loved it! For dinner she would cut up tons of vegetables and meats and let all of us kids make our own packet, genius!
Fast forward to now, how smart is this. First kids love to eat what they made or helped make. Second you can totally entertain a large group and accommodate allergies and dietary needs without inconveniencing anyone.
ENTERTAINING
These are perfect for a summer backyard get together! Simply have all your ingredients cut and prepped and foil rectangles ready. Everyone can make their own packet, label with charcoal crayon. Throw these on the grill and everyone gets to eat what they like, it’s perfect for anyone with food allergies or picky eaters. The 30 minutes they take to cook is the perfect time for some drinks and conversation. It’s like the backyard version of mongolian BBQ
PACKET OPTIONS
- VEGTABLES: Onion, Potatoes, Sweet Potatoes, Carrots, Green Beans, Zucchini, Squash, Beets (thinly sliced) Parsnips, Bell Peppers, broccoli, cauliflower, garlic and corn.
- PROTEIN: Burger Patties, Polish Sausage, Chicken, and Ham.
- SPICES AND SAUCES: Garlic powder, onion powder or salt, rosemary, basil, thyme, soy sauce, coconut aminos, and balsamic glaze.
Step 1
Cut up all vegetables and meats. This evening I used potatoes, sweet potatoes, carrots, onions, broccoli and polish sausage.
Step 2
Drizzle Avocado Oil or Olive Oil over a large piece of tin foil. The foil piece should be large enough to pull edges together and still allow a lot of the vegetables to lay flat. Then fill the center of the foil with vegetables and place polish sausage on top. Drizzle more olive oil on top and sprinkle with your favorite seasonings. I also place little squares of butter out for those who are no dairy free. We like to use garlic powder and onion salt.
Step 3
Pull sides of foil together and roll over itself to seal. Roll edges over itself to seal. Use a marker or charcoal marker to label each person’s packet. Place on grill preheated to 350 for 30 minutes. I do like to use tongs and grab the edge of the packet and gently shake them about 15 minutes in.
Hobo Dinner
Ingredients
- 2 Yukon Gold Potatoes
- 2 Sweet Potatoes
- 1 Onion
- 2 Ropes Polish Sausage
- 1/4 cup Avocado Oil or Olive Oil
- 1 tbsp Garlic Powder
- 1 tbsp Onion Salt

Prep and Packets

Grilling
- Preheat Grill to 350 or medium heat. Pull sides of foil together over the top of food and roll over itself to seal. Roll edges on both sides over itself to seal. Use a marker or charcoal marker to label each person's packet. Place seam side up directly on grill rack for 25-30 minutes. I do like to use tongs and grab the edge of the packet and gently shake them about 15 minutes in.
Oven
- Preheat oven to 400. Cook directly on the rack seam side up for 25-30 minutes. Shake with tongs 15 minutes in.
