EASTER EGG MOUNDS COPYCAT

This is our first Easter following a restrictive diet. Well Frankie has always had a severe egg allergy so some candy was limited but that seems like child’s play now that he needs to be dairy, soy, wheat, gluten, peanut aaannnddd egg free!

His favorite candy bar was always mounds bars or almond joys. Those are off the table this year. I knew Easter was going to be tricky because it often revolves a lot around candy for little kids. I can tell you though, my son is shifting his enjoyments from food to experiences which I believe is a overall healthier way to live, both mentally and physically. For example, we were invited to an egg hunt, I gave him two options: 1. We stay home and do an egg hunt at home where the eggs would only be filled with items he could have and of course money. 2. We go to our families house for an egg hunt where he will be welcome to hunt eggs but may not be able to eat the candy within them. His reply, “I think the egg hunt will be more fun with friends even if I can’t have everything, I’ll be fine mom.” Melt my heart!

Back to the Mounds. I wanted to do at least one special item for him, so why not his favorite candy bar, turned top 8 allergy free! And in an egg shape for Easter!

TASTE AND TIME

Frankie gave these mounds eggs a 10/10! The taste is so similar to mounds and has that homemade taste we long for. These take a little time for cooling and cooking but the hands on time is very minimal.

These coconut filled eggs are just like mounds bars! Dairy Free, Vegan, GF and delicious!

Equipment

  • Kinder Egg Shells

Ingredients

Coconut Filling

  • 1 15 oz Can Coconut Milk (Full Fat)
  • 1/2 cup Sugar

Add to coconut filling when reduced

  • 1/2 cup Powdered Sugar
  • 2 cups Shredded Sweetened Coconut

Egg Shell

  • 1/2 bag Enjoy Life Chocolate Chips Melted

Instructions

Coconut Filling

  • Boil one can of coconut milk with 1/2 cup granulated sugar until it is reduced to about half and the consistency of honey.
  • Once boiled down remove from the heat, stir in powdered sugar until dissolved then coconut shreds. Let cool.

Chocolate Shell

  • Melt Enjoy life chips in microwave, Chocolate will remain tempered if you melt half way (leaving some chips solid) then remove and stir to melt solid chips.
  • Using a spoon spread an even layer of chocolate in bottom of egg shell, I used a kinder egg shell. Place in fridge to cool approximately 10 minutes.
  • Once cooled fill egg shells with coconut filling and using a spoon to spread, place a thin layer of chocolate on top of filling, making sure to get all the edges. Cool for approximately 50 minutes or until hardened.
  • Pull gently on all edges of egg mold to release, then flip. Fill Ziplock bag with melted chocolate for drizzle decoration. Make sure this chocolate is not to warm or it will melt the egg. Cut the tip of ziploc and drizzle over eggs, leave at room temp for final step to cool.
