S’MORES

S’mores are a huge part of our life. We love Spring, Summer, Fall and even Winter campfires. GF and dairy free diets can make it tricky, sometimes! Not only is this easy but its cheaper than buying the dairy free chocolate bars.

COST AND TASTE

  • COST Enjoy life rice milk bars cost $1.59 per bar and are $1.12 ounces making them about $1.42 an ounce. Enjoy life chips are $4.39 for 10 ounces, making them 0.42 cents an ounce. Using the Enjoy life chips is less than half the price. We all know allergy friendly diets can get expensive! This is a cost effective hack that’s delicious.
  • TASTE Enjoy life chips are by far our favorite dairy free chocolate. I have tried many others and there is no comparison. We also like them better than the rice milk chocolate bars. The only thing to be careful of is these chips will melt more easily than the chocolate bars. Which makes them perfect for smores! Once that warm marshmallow hits the chocolate it melts and turns into such a delicious s’more. With that said, don’t leave them in direct sunlight or too close to the fire.

STEPS

  1. GRAHAM Find a gf graham cracker of your choice. We use Enjoy life crunchy Cookies, vanilla honey graham. We have also used the Enjoy life crunchy sugar cookies too!
  2. Lay out parchment paper or wax paper on the coutner to have an area for the cookies and chocolate molds to rest.
  3. Melt enjoy life chips in the microwave. I use a low setting on mine to ensure the chocolate stays tempered. You do not want the chocolate to get above 115 degrees F. I microwave mine on 40% for about 4 minutes and stir it every 60 seconds. If you do get the chocolate too hot, just add chips to cool it and help it temper.
  4. Pour chocolate into molds or use a ziplock bag to drizzle chocolate straight onto cookie graham. I usually do some of both. I bought my molds off amazon, 8.99 for 4 molds. They are shown in the video at the bottom.
  5. Let chocolate cool at room temperature until hardened. Remove chocolate from mold and gently break off any extra around the edges. The cookies will be good to go once cooled. You can put the chocolate into the fridge to cool faster but cooling to fast can cause some white cloudiness so be mindful if that will matter to you.
