Broccoli Salad

Broccoli Salad and back yard cook outs go together at our house. I love that I can make this side dish in the morning or an hour before needed and it will taste amazing either way. Even those who say they don’t like broccoli will find this one hard to resist.

This recipe combines a love of sweet and salty with crunchy! The vinegar helps soften the broccoli to the perfect texture. The salt from the bacon pairs perfectly with the golden raisins. It is truly a side dish that’s hard to stop eating, and its main ingredient is broccoli!

  • Step 1: Cut bacon into small pieces about 1 inch or less. Cook bacon until firm and slightly crunchy. Place on a paper towel to absorb excess grease.
  • Step 2:  While the bacon is cooking, mix vegan mayo with sugar and vinegar until sugar is fully dissolved. Add in broccoli and coat well. Add in raisins, bacon and sunflower seeds, saving a little of the raisins and bacon for topping. Mix well, transfer to a smaller dish if you’d like, top with additional raisins and sunflower seeds.

  • 5 Cups Broccoli
  • 6 Slices Bacon
  • 3/4 Cup Vegan Mayo
  • 2 ½ tbsp Organic Sugar Less if using non-organic
  • 1/4 Cup White wine vinegar
  • 1/2 Cup Golden Raisins
  • 1/2 Cup Sunflower seeds
