Broccoli Salad

Ingredients

  • 5 Cups Broccoli
  • 6 Slices Bacon
  • 3/4 Cup Vegan Mayo
  • 2 ½ tbsp Organic Sugar Less if using non-organic
  • 1/4 Cup White wine vinegar
  • 1/2 Cup Golden Raisins
  • 1/2 Cup Sunflower seeds

Instructions

  • Step 1: Cut bacon into small pieces about 1 inch or less.Cook bacon until firm and slightly crunchy. Place on a paper towel to absorb excess grease.
  • Step 2:  While thebacon is cooking, mix vegan mayo with sugar and vinegar until sugar is fully dissolved.Add in broccoli and coat well. Add in raisins, bacon and sunflower seeds,saving a little of the raisins and bacon for topping. Mix well, transfer to asmaller dish if you’d like, top with additional raisins and sunflower seeds.
