I love this side salad for so many reasons! The best part is it is fast and there is no cooking needed. As for pasta it is just not needed, the creaminess of the avocado takes its place! The garlic dressing makes it taste so similar but better than a traditional italian pasta salad.

WHY I LOVE THIS

FAST! Like I said this side salad is fast. There is no cooking needed and it does not need to marinate at all. I throw it together right before dinner and its ready to go. It takes about 15 minutes to clean and chop the veggies. I like to use garlic expression dressing because it is top 8 allergy free and absolutely full of flavor.

Flavor This side salad is so flavorful. The avocado gives it a creaminess, the bright peppers and tomatoes give it a great summer flavor. Add the cucumber for extra crunch! And the garlic expressions dressing is amazing! If you have not tried this dressing you are missing out!

Ingredients For this side salad I used mini peppers, english cucumbers, avocadoes, mini tomatoes whatever color you’d like and garlic expressions dressing. You can change up the veggies as you would like or use whats on sale or in season. I do prefer these flavors together.

Ingredients

  • 1 Bag Mini Peppers
  • 1 Pint Cherry or Sun Tomatoes
  • 2 English Cucumbers
  • 1/2-1 Cup Garlic Expressions Dressing Add dressing to taste.
  • 2 Medium Avocados

Instructions

  • Chop Peppers, Cucumbers, and Cherry Tomatoes to bite size pieces. Mix them together with garlic expressions dressing. Add chopped avocado last to avoid breaking it down when mixing. Serve right away or chill before serving.
